In the search results you can change it at the Booking > Settings > Search page.
In the booking Listing page, you can change it at the top right side at the Booking Listing page. It's saved each time, when you change it. And it's will be exist if you open it next time, until you do not reset the filter options or change it again.

Unfortunately, if you need to make the several specific number of bookings per the same time slot at the same date in SAME CALENDAR, it is NOT possible in any versions of Booking Calendar. Sorry. Please check my suggestion below.
A) The ability to book for the specific times only possible in the Booking Calendar Business Small / Business Medium versions (and in higher versions for booking resources with capacity =1). Please note if you will make the booking for the specific time slot, this time slot becomes unavailable for the other visitors for that selected date in the current specific calendar.
In lower versions of Booking Calendar it is possible to make bookings only for restricted timeslots.
You can configure the time slots selections on the Booking > Settings > Form page. Please use the "shortcode generator" on the right side of that page for the correct generation of the shortcode.
You can use one"timerange" (timeslots) or "start time" and"end time" selections or"starttime" and "duration"of time selections shortcodes or even start time and end time entering shortcodes. You can test the bookings for the specific time-slots in action on the live demo of Business Small version (which is configured by default for the bookings of specific time-slots) here: http://bs.wpbookingcalendar.com/ Other live demo you will need to reconfigure.

I can suggest that you can create the booking resource with specific capacity in the Booking Calendar Business Large version for each of your times and then have the independent calendar for each of your time slots for the reservation. It means that your visitors firstly need to select the times in the select box, where all your options will be listed.

Activate it at the Booking > Settings General page in “Auto cancellation / auto approval of bookings” section.
But would this approve all bookings made by the form too? I would only want the google calendar events to be auto approved

I have a new/clean installation with 4 resources added. When I get to the import step I get a message that says "Error! No Dates".
However, the Google Calendar contains dates for the time period specified but they are not importing.

Finally booking please recheck at the booking Listing page, your events from the google calendar was not imported already. Otherwise system will not import them second time.

Booking Calendar does not support "payfast" payment syste, yet.
The Business Small and higher versions of the Booking Calendar is support Stripe, PayPal (Standard and PayPal Pro Hosted Solution (please note, PayPal PayPal Pro Hosted Solution its does not the same as PayPal Pro)), Authorize.Net, Sage Pay, iDEAL Buckaroo and iPay88 payment gateways integration (also plugin support showing text info for payment by cash and bank transfer - its only show text info but does not connect to any bank system), other payment systems are not supporting yet. You can configure and activate it at the Booking > Settings > Payment page.
If you want to make the integration of your payment system by yourself, you will be able to check how integrated payment systems exist in the plugin like Stripe payment gateway. Please check more about this here: https://wpbookingcalendar.com/faq/custom-gateway-in-7-0/
