Hello, I have to manage the costs with and without VAT.
I have filled in the prices in the calendar without VAT (also in the seasons and options) because I am addressing professionals. In the custom form, there is the total that is displayed according to the options (always without VAT). Then I also have to show the final calculation with VAT to proceed with the Stripe payment. Unfortunately, we can't mix reference costs without VAT with payments with VAT.
I can't find anything to manage this situation...

In the Booking Calendar Business Medium or higher versions possible to configure additional costs for selected options in the select boxes or check boxes (such options can be hidden and checked by default). It's useful in case, if you need to add the tax cost or cleaning fee or any other additional cost for the booking. You can configure it at the Booking > Resources > Advanced cost page. You can configure and activate it at the Booking > Settings > Payment page.

I'm afraid I don't understand. I'm aware it is possible to select specific available timeslots in the form, but this makes the available time slots the same for every day. I want to be able to set my available times on each available day like I can on the availability tab calendar.
I do not have a booking page yet because I'm trying to find a plugin that allows me to implement the workflow I need.

Unfortunately, if you need to make the several specific number of bookings per the same time slot at the same date in SAME CALENDAR, it is NOT possible in any versions of Booking Calendar. Sorry. Please check my suggestion below.
A) The ability to book for the specific times only possible in the Booking Calendar Business Small / Business Medium versions (and in higher versions for booking resources with capacity =1). Please note if you will make the booking for the specific time slot, this time slot becomes unavailable for the other visitors for that selected date in the current specific calendar.
In lower versions of Booking Calendar it is possible to make bookings only for restricted timeslots.
You can configure the time slots selections on the Booking > Settings > Form page. Please use the "shortcode generator" on the right side of that page for the correct generation of the shortcode.
You can use one"timerange" (timeslots) or "start time" and"end time" selections or"starttime" and "duration"of time selections shortcodes or even start time and end time entering shortcodes. I can suggest that you can create the booking resource with specific capacity in the Booking Calendar Business Large version for each of your times and then have the independent calendar for each of your time slots for the reservation. It means that your visitors firstly need to select the times in the select box, where all your options will be listed.

If you are using the booking resource selection shortcode: https://wpbookingcalendar.com/faq/shortcode-booking-resources-selection/
then you need to be sure that you do not use this parameter form_type='standard' in the shortcode. Please remove it.
Otherwise it's overwrite the "default custom booking form" option from the Booking > Resources page.
The shortcode have to be like this: [bookingselect label='Please select the resource:' nummonths=1 type='17,16,15']
where you defined your existing ID of booking resources instead of 17,16,15
And then open the Booking > Resources page and define for specific booking resources the specific custom booking form.
