Is there a way of forcing guests to book a fixed range of days depending on the day of the week?
Monday to Friday = 4 nights
Friday to Monday = 3 nights

At the moment in General Settings I have Specific Days Selection as 4,5,8. But this means that people can book Monday to Thursday or Friday to Tuesday which causes problems.

In case, if you need to have the different emails for the different booking resources so then you need to check the BookingCalendar MultiUser version.
In this version each activated regular user can have their own booking admin panel and can configure their own emails.
So here different emails relative to specific WP user, and each such user can have their own booking resources. Its means that different booking resources will have different emails.
In the Booking Calendar MultiUser version possible that each registered WordPress user (your owner) have own individual independent booking admin panel, and can see and manage only own booking resources and some other settings (other owners will not see the bookings from this owner, they can see only own bookings). I have the Large version of Booking Calendar and i have now set up the "search availability" function, it working fine but not perfect.

I will explain it in an example of booking separate rooms and the entire house.
Please note, all such separate properties will have separate booking forms with calendars at the front-end side of your website.
It means that you can book an entire house, or specific room in a separate booking form.
So in case if you want to show as unavailable some dates or times in all calendars (booking resources), if some booking was made in only one calendar (booking resource), then it’s possible to configure it with "aggregate" parameter in the Booking Calendar shortcode ( it's possible in all paid versions of Booking Calendar). This parameter makes the dates in the calendar unavailable if these dates were booked in some other booking resources.

The problem comes with the search availability form as you mention. I was looking for some "Booking rules" or equivalent to solve this in a better way. I think this will be quite messy for the customer to understand the different calendars.
